Why surfers love it: Cold, sweet and ready in ten minutes. The fruit and honey bring quick energy after a warm-water session, and the granola and coconut add crunch and staying power.

Ingredients

  • 2 packs (about 7 oz) frozen unsweetened acai purée
  • 1½ frozen bananas (sliced before freezing), plus 1 fresh banana for topping
  • 3 soft Medjool dates, pitted
  • 1 tbsp honey, plus more to drizzle
  • ¼-½ cup coconut water or milk (just enough to blend)
  • Pitaya drizzle: ½ cup frozen pink pitaya (dragon fruit) cubes, 1 tsp honey, 1-2 tbsp water
  • Toppings: ½ cup granola, 2 tbsp coconut flakes

Method

  1. Make the pitaya drizzle: blend the pitaya, honey and just enough water to make a pourable pink sauce. Scrape it into a cup.
  2. Run the acai packs under warm water for a few seconds, break them into chunks and drop them into the blender with the frozen banana, dates, honey and ¼ cup coconut water.
  3. Blend on low, pushing down with the tamper and adding liquid a spoonful at a time, until thick and smooth like soft-serve. Too much liquid makes it a smoothie.
  4. Spoon into two chilled bowls.
  5. Top each with granola, sliced fresh banana and coconut flakes, then zigzag over the pitaya drizzle and a little more honey. Eat right away.

Tip: No honey for babies under 1 year old. For them, skip it and let the bananas and dates do the sweetening.

Where to eat it

The Sunrise Shack, Oahu's North Shore and more, Hawaii. A bright yellow bullet-coffee and smoothie-bowl shack that started on Oahu's North Shore in 2016. According to its own story, it was founded by brothers Alex, Travis and Koa Smith with their friend Koa Rothman, all surfers raised in the islands. Aloha State Daily reported the acai bowl, topped with banana, pitaya sauce, granola and coconut flakes, as one of its most popular. This recipe is an original home-cook version inspired by the spot. It is not their recipe, and we have no affiliation with them. Go eat the real thing.
